Tropical Citrus Sauce

This sauce uses the technique of a stir fry sauce, which makes it easy to put together. Mango juice is used, but feel free to put your own spin if necessary, by using pineapple or even orange juice.

Curry powder gives a boost of flavor to this simple sauce along with crushed red pepper for a little heat.

This sauce can also be used as a glaze on chicken, seafood, or as a dipping sauce.

Tropical Citrus Sauce

YIELD: 25 portions, 1/4 cup servings

Ingredients

6 1/4 cups mango juice

1 ½ tsp kosher salt

6 Tbsp cornstarch

2 Tbsp curry powder

3 Tbsp honey

2 tsp crushed red pepper

Directions

  1. In a pot, combine the sauce ingredients over medium heat using a whisk.
  2. Bring the mixture to a boil and stir constantly while bringing it up to temperature.
  3. Reduce the heat to a simmer and then cook for 3-4 minutes or until the sauce becomes bubbly and thickens in texture. Serve immediately or keep warm until service.
