Parmesan Garlic Broccoli

Don't shy away from serving broccoli to your kids. This is one of our Chefs in Schools recipes and is a winning side dish in school cafeterias. Kids love it!

Yield: 6 servings

Ingredients

1 1/2 heads fresh broccoli

2 cloves fresh garlic

1/4 cup Parmesan cheese

1/4 tsp. salt

1 Tbsp. vegetable oil

Preparation

  1. Cut broccoli up into bite size pieces. Steam the broccoli on the stove either using a steamer basket or by placing it in a pot with 1/2 inch of water and covering with a lid. Steam for a couple of minutes so that the broccoli retains its bright green color. It should still be slightly crunchy, but not raw.
  2. While the broccoli is cooking, mix together the oil, salt, Parmesan cheese, and garlic in a mixing bowl.
  3. Add the broccoli and toss all the ingredients so that they are well incoporated. Serve immediately.
