Basics of Gluten-Free Cooking

Gluten-free cooking does not have to be challenging! Come join Project Bread Chef Educators Vanessa and Ryan as they review some of their favorite gluten-free lunchtime recipes. 

In this foundational class on the basics of gluten-free cooking, you will learn the steps and key concepts behind making rich and flavorful gluten free meals. This class will feature recipes with Asian and Latin-American flavors and multiple plating options from rice bowls to tacos. We'll also be joined by Project Bread's registered dieticians who will help demystify some of the key concepts of gluten-free diets. As usual, our recipes are designed with your school kitchens and your student audience in mind.

This training is intended for school food service professionals, including school nutrition directors, cafeteria managers, head cooks, prep cooks, and anyone wanting to learn more about introducing more gluten-free options into their meal program.

This 90-minute training meets the following Professional Standards Learning Objectives:

  • 2130 (develop culinary skills necessary for school meal preparation, 60 minutes).
  • 2640 (promote a culture of food safety behaviors in the school community, includes training on food allergens, 30 minutes).
